If you could only eat one thing for the rest of your life, what would it be? For me, the answer is simple: sandwiches!
I know it’s a broad category and an answer that probably won’t be a surprise to readers of this blog. (See evidence here, here and here.) There’s just something about a perfectly crafted sandwich, one where the bread is chewy but not too tough, and all of the ingredients combine to make something much greater than the sum of their parts. They’re also versatile. What other food can move so effortlessly from a tailgate to a road trip to a Father’s Day picnic?
One of my longtime favorites is a delightfully easy take on a simple cheese sandwich. The trick here is to use good-quality ingredients: sharp cheddar, spicy mustard and peppery arugula layered on tender white sandwich bread. It sounds simple—and it is—but it’s always one of the first items to disappear from a lunchtime spread, and no one ever believes me when I say that it only has five ingredients.
Cheddar Sandwiches with Spicy Mustard and Arugula
Makes 4 sandwiches
Cheddar should be the star of the show here, so don’t skimp on it. I’ve found that any cheddar aged at least one year will do, and products aged longer will have an even better sweet-salty-sharp bite.
4 tablespoons spicy mustard
1 tablespoon honey
8 slices white bread
2 cups arugula
Cheddar cheese (aged at least one year)
In small bowl, mix together mustard and honey. Evenly distribute and spread onto one side of each slice of bread. Top four slices of bread with ¼ cup greens, then a single layer of cheese. Top with another ¼ cup greens and second piece of bread. Serve.
